Lemon Meringue Cheesecake Cupcakes, for #SummerDessertWeek

Happy Friday! I hope you’ve had a great week!

Today marks my last recipe for #SummerDessertWeek, and I am wrapping it up with a delicious Lemon Meringue Cheesecake Cupcake recipe. I don’t know if you are a fan of The Cheesecake Factory, but I am. However, the menu always overwhelms me. Have you seen it? It’s a full on binder, full of so many great options. And the cheesecake flavors? Gah. Soooo many to choose from. I have the toughest time, but one of my favorites is always the Lemon Meringue Cheesecake. Cheesecake, topped with lemon meringue pie?

Yes, please.

So, that cheesecake was the inspiration for my final dessert week recipe. Miniature, 3 bite versions, still full of flavor, still topped with piles of fluffy meringue. Don’t like crust? (I don’t!) Then don’t add it. Although I am not a fan, I did add a crust to each of mine, because I wanted the true cheesecake taste and appearance. Don’t care for meringue? Again, don’t add it. Not a lemon lover? Add raspberry jelly, or cherry, or chocolate chips. This recipe is very adaptable, so I think you can get a lot of use out of it!

Lemon Meringue Cheesecake Cupcakes

Lemon Meringue Cheesecake Cupcakes

The perfect combination of lemon meringue pie and cheesecake! Easy to make, and very adaptable!

Ingredients

  • For the crust:
  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 2 tablespoons sugar
  • For the cheesecakes:
  • 2- 8 oz bricks of cream cheese, softened
  • 2 tablespoons cornstarch
  • 2/3 cup plus 2 Tablespoons Granulated Sugar
  • pinch of salt
  • 2 large eggs
  • 1/3 cup heavy cream
  • 1/2 cup sour cream
  • 2 teaspoons Vanilla Extract
  • 1/2 teaspoon lemon extract
  • 12 teaspoons lemon curd
  • For the Meringue
  • 3 egg whites, room temperature
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat oven to 350F. Place 12 cupcake liners into cupcake pan.
  2. Pour melted butter over graham cracker crumbs and sugar, mixing well. Press crumb mixture into bottoms of all 12 cupcake liners. Bake for 8 minutes, then remove from oven.
  3. Place one 8-ounce package of the cream cheese, 1/2 cup of the sugar, and the cornstarch in a large bowl. Beat with an electric mixer on low speed until creamy, about 3 minutes, then beat in the remaining package of cream cheese.
  4. Increase the mixer speed to high and beat in the remaining sugar, then beat in the salt and vanilla. Blend in the eggs one at a time, beating only until completely blended. Mix in the sour cream,heavy cream and extracts. Be careful not to overmix the batter.
  5. Pour the batter into the cupcake liners. Add a teaspoon of lemon curd to each, and swirl to combine. Bake the cheesecakes until the tops are lightly browned, about 30 minutes. Allow to cool in the oven with the door propped open. Chill until ready to serve.
  6. When ready to serve, prepare meringue. Whip egg whites with a pinch of salt until medium peaks appear. Add sugar and vanilla, and whip until stiff peaks. Dollop or pipe onto chilled cheesecakes, then bake in a preheated oven until meringue browns, or, use a kitchen torch. Serve immediately.
